These are awesome flatbread or wraps, I even like to eat them with a chili or soup.
Serving: 6 pcs
400 g Chickpea flour
1 tbsp Husk (psyllium)
1 tsp Salt
10 g Yeast
3 dl Water (1 cup +1 tbsp)
Mix the yeast with water, until dissolved.
Mix in the husk, and stir until it starts to thicken, now mix in the salt and 300g of chickpea flour.This dough doesn’t need to rest and it’s a very soft, sticky dough, that is why you will need the rest of the flour to make the dough into flat bread.Cut the dough into 8 pieces (if you use a small frying pan you would need to cut into more pieces).
Heat up a frying pan, oil free.
Roll out each piece to about 2-3 mm thick using the rest of the flour and bake them on the frying pan, be careful the dough is very delicate.
They don’t take long to bake 1-2 min on each side, when they get a little golden on each side they are done.
