Scramble tofu is easy to make, taste amazing and can pack a ton of protein. This is one of my go to meals, for the reasons listed just before. This is my take on it, but you can add whatever veggies and spices you want.
Serving: 1-2 people
200 g Firm tofu (I use a really firm tofu)
1 Red bell pepper
50 g Spinach
1 tsp Tumeric
½ Tsp Coriander
½ Tsp Salt
2 tbsp Nooch
Finely chop the onions and bell pepper.
Fry the onions and bell pepper until the onions get soft.
Crumble up the tofu and mix it in with the onion and bell pepper.
Add all the spices, mix it in so all the tofu is yellow.
When your scramble is almost done, add in the spinach.
Ready to eat, enjoy.
