This type of bread is very typical Danish, we love our rye bread. This, however, is a snack version of it. My whole family loves it, and I made it a lot when I first started to lose weight. Whenever I felt snack-ish, I would eat one of those, it tastes sweet without being unhealthy.
Serving: 12-13 pieces
3/4 cup Cracked rye kernels
3/4 dl Oat flakes
1 cup+ 2 tbsp Rye flour
1/2 cup Sunflower seeds
1/4 cup Flax seeds
2 tsp Soda
3 tsp Maple syrup ( or another sweetener)
3 dl Plant yogurt (i have a recipe on how to make this if you want)
50g Dark chopped chocolate
- Let the rye kernels soak for at least 4 hours or overnight.
- Mix the oats, rye flour, sunflower seeds, flax seeds, soda, maple syrup, and yogurt together, and then mix in the soaked kernels and the chopped chocolate until it is a uniform mass. This dough doesn’t need to rest because we use soda and not yeast.
- Use a tbsp to place 12 pieces of dough on a covered baking sheet or you could use muffin tins.
- Let them bake for 45-50 min. at 180 degrees C.
